I want to remove the back panel (the one with the netting) in the Copen in order to fit two hooks.

I can't see exactly how to remove it from either the car or the workshop manual. Can someone enlighten me? I've already removed the roll over bars, which may help.

You need to take off the side trim panels as well - the ones holding in the seatbelts. After that, you can pop out the centre back panel as it is held in with push pops.
